In June 1969, Elvis Presley put his own stamp on "Polk Salad Annie" – a 1968 song written and performed by Tony Joe White aka the Swamp Fox, also known for his 1967 hit "Rainy Night in Georgia." The bluesy swamp rock stew tells the story of a poor rural Southern girl and her family, describing the song's titular vegetable as "a plant that grows out in the woods and the fields" and "looks something like a turnip green." The song paints an evocative picture of life in Louisana, "where the alligators grow so mean," and where "everyday before suppertime," Annie would "go down by the truck patch," "pick her a mess of Polk salad," and "carry it home in a tote sack." This live version from Elvis Presley was recorded at his Madison Square Garden show in June 1972 and released on the album As Recorded at Madison Square Garden, which peaked at Number 11 on the Top 200 US Billboard albums chart.
